- 2 tbsp maple syrup
- 3 medium ripe but firm pears
- 2 large pinches of fine sea salt
- 1/2 teaspoon pumpkin spice blend
- 1/4 cup sucanat
- spiced sugar (see recipe above)
- 2 teaspoons vanilla extract
- 1 stick (8 tbsp) local, unsalted butter at room temp
3. How to Cook:
Begin by preparing the pears and combining the dry ingredients. Gently fold the wet ingredients into the dry, then add the pears. Bake until golden brown and a toothpick comes out clean. Let cool before serving.
Step 1: Prepare the Pan and Spiced Sugar
Preheat your oven to 175°C (350°F). Grease a 23-25 cm cake pan with butter or cooking spray. In a small bowl, combine the sucanat, cardamom, pumpkin spice blend, and cinnamon. Reserve 2 tablespoons of this spiced sugar for topping the cake later; add the remainder to the softened butter.
